There are countless recipes for any type of dessert that one could think of, all of which are said to be the perfect one. Having said that, there are innumerable recipes for cheesecakes, again all of which we hope will turn out perfectly.
When it comes to cheesecake everyone has their personal favorite. So, the question is baked or refrigerated? If refrigerated is your answer to that question then this is the recipe for you. The beauty of this recipe is that it is supremely versatile. You can choose, either you can make the real deal or a cheese-less fruity variation of your choice all by changing one ingredient.
As for ingredients, well there are only five of those, making this recipe super simple and one hundred
percent fool-proof. Great for something quick and delicious or for the budding little chef in your kitchen.
Cheesecake Recipe
Ingredients:
- 250ml cream (or replace the cream with cream cheese for an authentic cheesecake)
- 1/2 cup lemon juice (or replace with strawberry; passion fruit and so on.)
- 1 tin condensed milk
- 1pkt Tea biscuits (Tennis biscuits in South Africa.)
- 1/4 cup melted butter
Method:
- In a bowl, crush the biscuits. Then add the melted butter and mix through to make the base. Press into a pie dish.
- Whip the cream and add the condensed milk and lemon juice. (If you are using cream cheese, soften the cheese and mix in the condensed milk, you may want to add 5ml vanilla essence to the mixture.
- Beat until thick.
- Pour onto biscuit base and refrigerate.
A little trick with this recipe is to put it into the freezer 2 hours before serving. Then make sure to take it out a little while before serving, depending on the heat of the day, it transforms from a simple cheesecake to a frozen ice cream dream.
To make this recipe a little more extravagant, if made with cream cheese, top the cake with a fruity coulis of your choice.
To make the coulis:
- 125ml water
- 125ml caster sugar
- 300ml fruit ie. strawberries; raspberries
Directions:
- Bring the water and the caster sugar to the boil.
- Add the berries.
- Stirring regularly, cook for 3-5 minutes.
- Blend the mixture.
- You may or may not choose to strain the coulis to remove any seeds.
- Allow to cool before topping your already chilled cheesecake.
Finally, you could have extra berries to garnish your cake, creating a beautiful; mouth-watering dessert that will have friends and family delighted.
This recipe is especially good on a hot and balmy summers day out in the warm sunshine.
